Abstract
The research includedmale goat kids of thewhite improved breed slaughtered at 90 and 150 days of age. It the tissue composition of fatness after slaughter was qualified was and the haunch as well as the adductor’s chemical composition will pretend the composition of fatty acids and the content of cholesterol. The age category of animals significantly, although only slightly in many cases, influenced the examined meat quality parameters. The influence of agewas affirmed on profile of fatty acids in intramuscular fat.
