Abstract
The aim of this study, was to determine the influence of the lactic acid bacteria on the growth of fungi such as Aspergillus and Rhizopus. Also the influence of the acetic acid and formic acid on the growth of the lactic acid bacteria was a subject of this research. Inhibition of microbial growth was evaluated using well plate method and measurement of changes of the impedance with the BacTrac 4300. Inhibitory in the diffusion method were metabolites of used bacteria, such as: Lactobacillus casei 0848, Lactobacillus plantarum MiLAB393, Pediococcus parvulus MiLAB099 and the mixed culture of these strains of the lactic acid bacteria (MIX), however at the measurement of the impedance a acetic and formic acids were an inhibitory (the same strain and the mixed culture). Tested strains did not have an antifungal properties. The used acids have shown inhibitory activity against the growth of selected strains of lactic acid bacteria.
